Slice pound cake into 12 equal slices. Brush each slice on both sides with melted butter. Cook quickly on hot grill or griddle on each side until lightly browned. Removed and set aside. In medium bowl, combine the mango, kiwi, lemon zest, lemon juice and Terrapin Ridge Farms Passion Fruit Jalapeno Jelly. Season with a pinch of salt. Place a slice of pound cake on a plate and top with a couple of spoonfuls of tropical fruit mixture. Add a dollop of whipped cream and sprinkle generously with coconut.
