Blueberry, Bourbon, Pecan Pork Roast [1]

Ingredients: 

2 3 ½ pound boneless pork loin roasts, tied to hold shape (7 lb. total)
½ jar Terrapin Ridge Farms Blueberry Bourbon Pecan Jam
1 minced garlic glove
Sea Salt

Directions: 

Preheat oven to 400 degrees F. Smear the minced garlic and salt all over the pork tenderloin. Roast until meat thermometer inserted into center of pork registers 145 degrees; about 1 ½ hours. Remove from oven, mix our Blueberry Bourbon Pecan Jam with the pan drippings and drizzle over roast before serving. Enjoy this recipe with family at the dinner table.
