Shrimp Burrito with Chipotle Aioli

 
The chipotle is what makes this burrito oh so yummy!
Ingredients: 
2 tablespoons olive oil
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped yellow onion
1 1/2 cups fresh corn kernels, cut from about 2 cobs
1 teaspoon salt, divided
6 large eggs
1/4 teaspoon black pepper
1/2 cup grated queso blanco (Mexican white cheese)
4 (10-inch) flour tortillas, gently warmed
1 Jar Terrapin Ridge Farms Chipotle Aioli
Directions: 
Heat the oil in a large, heavy, shallow skillet over medium-high heat. Add the butter and melt until foamy. Panfry the shrimp in the butter and oil until golden and cooked through, about 8 minutes. Transfer to plate and cover with aluminum foil to keep warm. Place a warm flour tortilla on a work surface. Spread 3 tablespoons warm refried beans, then top with a dollop of Terrapin Ridge Farms Chipotle Aioli and finish with about 2 ounces of cooked shrimp. Fold in the sides of the tortilla over the filling and roll up to completely enclose.
