This is new twist in a traditional egg sandwich.
Ingredients:
4 each Large eggs, lightly beaten
4 oz Cream cheese
½ c Chopped ham
¼ c Onion, diced fine
2 tbsp. Butter
To taste Salt and pepper
4 slices Cheddar cheese, optional
½ c Terrapin Ridge Farms Pipin’ Hot Pepper Mustard
4 each Bagels or Kaiser rolls, sliced.
Directions:
Preheat oven to 350 degrees. Spread Terrapin Ridge Farms Pipin’ Hot
Pepper Mustard on each half of Kaiser roll or Bagel. Lay cheddar cheese
on bottom half of bagel or roll and then cover with top half. Wrap bagels or
rolls in foil and heat in oven. Melt butter in a skillet over medium heat. Add
onion and ham, cook until onion is almost translucent. Add cream cheese,
quickly mix together. Pour eggs over mixture into hot pan and scramble
until almost set. Pull bagel or Kaiser roll foil pack from the oven and pull
each apart. Place a quarter of the egg mixture on each bottom half of
bagel or Kaiser roll, then cover with top half. Serve immediately. Makes 4
sandwiches.
