    Tailgate Snack Board

    It is football season once again, aka time to get your snack game on! If you want to eat some of the best gameday recipes out there, then this tailgate board is a must!

    Blackberry Chipotle Pulled Pork Mini Tacos

    Ingredients
    5-8-pound Boston Butt
    Your favorite BBQ rubs
    1 package Flour Tortillas
    1 Package of Shredded Cheese
    1 container of Sour Cream
    Melted butter
    1 Jar of Terrapin Ridge Farms Blackberry Chipotle Sauce

    Instructions
    For Pulled Pork
    Remove the Pork Butt from package and coat in a layer of Blackberry Chipotle Sauce
    Cover the entire piece of meat in your favorite BBQ rub
    Heat your smoker to 275 degrees (or oven)
    Place on your smoker and cook until an internal temperature of 165 degrees Fahrenheit
    Remove from smoker and add another layer of Blackberry Chipotle Sauce and wrap in heavy duty foil
    Place back on smoker until an internal temperature of 207 degrees Fahrenheit
    Let the meat while wrapped in towels rest in a cooler for about 2 hours
    Remove from cooler and shred the pork either with your hands or with forks

    For Mini taco shells
    Preheat oven to 375 degrees Fahrenheit
    Brush butter onto both sides of the tortillas with melted butter
    Using a circular cookie cutter or a mason jar lid, cut the tortillas into small circles.
    Flip a 12-cup muffin tin over and place a cut-out piece of tortilla in the space between two cups, so that they make a mini taco shape. One muffin tin will fit 17 mini tacos.
    Bake for 5-8 minutes, or until just turning golden brown and crispy.

    To serve
    In a medium mixing bowl combine your pulled pork and a few dashes of Blackberry Chipotle Sauce
    Stuff each mini taco with pulled pork mixture
    Top with cheese and sour cream
    Drizzle some more Blackberry Chipotle sauce on the tacos
    Serve and enjoy!

    Chips & Dip

    Ingredients
    Terrapin Ridge Farms Creamy Chipotle Pepper Dip
    Terrapin Ridge Farms Hatch Chile Cream Cheese
    Tortilla Chips

    Instructions
    Open the dips, pour out the chips, dunk and enjoy!

    Chicken Tenders

    Ingredients
    1 package of chicken breast
    1 egg
    Whole Milk
    Salt and pepper to taste
    1 cup bisquick pancake mix
    1 table spoon of baking powder
    Terrapin Ridge Farms Nashville Hot Spice

    Instructions
    First cut your chicken into tenderloins
    In a small bowl mix together whole milk, 1 egg and salt and pepper
    In a separate bowl mix bisquick and baking powder
    Heat Vegetable oil to 300 degrees Fahrenheit
    Deep fry the chicken until golden brown
    Dip into Nashville Hot Spice Mustard

    Creamy Chipotle Pepper Chicken Sliders

    Ingredients
    1 Whole chicken
    Your favorite BBQ rub and/or spices
    1 package of Kings Hawaiian Rolls
    Sliced pepper jack cheese
    1 Jar of Terrapin Ridge Farms Creamy Chipotle Pepper Dip

    Instructions
    Set up your smoker for indirect cooking at about 375 degrees (or preheat your oven to 350 degrees).
    Spatchcock your whole chicken and season with your favorite BBQ rub and/or seasonings.
    Place your whole seasoned chicken in your cooker and cook until the breast temperature reads 165 degrees Fahrenheit
    Remove your chicken and with either heat resistant gloves or two forks shred your chicken until fine.
    In a medium size mixing bowl mix the shredded chicken and a jar of Terrapin Ridge Farms Creamy Chipotle Pepper Dip
    Half your Kings Hawaiian rolls and put about 2 tablespoons of chicken mixture
    Add sliced pepper jack
    Serve and enjoy!

    Truffle Aioli French Fries

    Ingredients
    1 package of russet potatoes cleaned and peeled
    1 2-quart container of vegetable oil
    Salt and pepper to taste
    Terrapin Ridge Farms Truffle Aioli

    Instructions
    Slice the potatoes into desired thickness.
    Soak the potato slices in cold water for a minimum of one hour.
    Place fries on paper towels and get them as dry as possible.
    Heat oil in your Dutch oven to 300 degrees Fahrenheit.
    Carefully place potatoes in the oil with a spoon. Be Careful on this step as oil can splash and burn.
    Place the cooked potatoes on a plate lined with paper towels
    Remove them and place in your serving dish
    Top with Terrapin ridge farms Truffle Aioli and some sea salt.

    Sausage & Kielbasa

    Ingredients
    Your favorite assortment of Sausages and types of kielbasas
    Terrapin Ridge Farms Garlic Kraut Mustard

    Instructions
    Set up your smoker for indirect cooking and heat it up to about 350 Degrees Fahrenheit
    Place your Sausages and Kielbasa on your smoker and cook until an internal temperature of 165 degrees Fahrenheit
    Slice and Serve with Terrapin Ridge Farms Garlic Kraut Mustard

    Steak Sliders

    Ingredients
    1 cut of Flank Steak (weight depending on the size of your party)
    Your favorite steak seasoning
    1 package of Kings Hawaiian Rolls
    1 bottle of Terrapin Ridge Farms Everything Aioli
    Pepper jack cheese

    Instructions
    Remove Flank steak from packaging and season with your steak seasoning of choice
    Cooked over direct heat until your desired internal temperature
    Once your steak has reached temp remove from fire and let rest for 15 minutes
    Slice thin and then cut slices in half
    Half your Kings Hawaiian rolls and top with sliced steak, slice of pepper jack cheese
    Drizzle with Everything Aioli
    Serve and enjoy!

    Turkey Meatball Sliders

    Ingredients
    1 Pound of Turkey Meat
    1 egg
    1 cup breadcrumbs
    Table spoon of minced garlic
    A few dashes or Worcestershire sauce
    Your favorite BBQ rub and/or spices
    1 package of Kings Hawaiian Rolls
    Sliced pepper jack cheese
    1 bottle of Terrapin Ridge Farms Everything Aioli

    Instructions
    Set up your smoker for indirect cooking at about 375 degrees (or preheat your oven to 350 degrees).
    In a medium mixing bowl combine Turkey Meat, 1 Egg, Bread crumbs, Worcestershire, minced garlic, and your BBQ rub/Spices
    Roll the mixture into baseball sized balls and place in your cooker, cook until internal temperature of 165 degrees Fahrenheit
    Remove from cooker and slice into discs
    Half your Kings Hawaiian rolls and top with half a meatball, pepper jack cheese and Everything Aioli
    Serve and enjoy!
