    Fish Tacos
    ½ cup YOUR CHOICE: Jalapeno Aioli, Pesto Aioli or Spicy Chipotle, Garnishing Squeeze
    1 lb Tilapia fillets cut into chunks or use shrimp, grouper any meaty type fish
    1 (10 oz) Package tortillas
    3 each Ripe tomatoes, seeded and diced
    1 bunch Cilantro, chopped
    1 each Small head Cabbage, cored and shredded
    2 each Limes, cut in wedges
    Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat. Grill fish pieces until easily flaked with a fork, turning once, about 9 minutes. Assemble tacos by placing fish pieces in the center of tortillas with desired amounts of tomatoes, cilantro, and cabbage, drizzle with Terrapin Ridge Farms Spicy Chipotle, Pesto or Jalapeno Aioli and garnish with lime wedges.

    Tater Tots
    1 bottle of YOUR CHOICE: Bacon Aioli, and Everything Aioli
    1 pkg. frozen tater tots
    1 8 oz. pkg. shredded cheddar cheese
    4 chopped green onions
    Sour cream (optional)
    Bake the tots according to package instructions. Cover with cheddar cheese and pop back in the oven about 7-10 min until cheese is melted. Put the tots on a plate or platter, top with sour cream and drizzle squeeze of choice all over!

    Fried Plantains with Tasty Dipping Sauce

    4 green plantains
    Salt
    Coconut oil or other high heat oil
    8oz queso fresco
    Terrapin Ridge Farms Everything Aioli, Bacon Aioli, Sriracha Aioli, Buffalo Ranch, or Pesto Aioli

    Cut each end off plantain and remove peel completely. Cut the plantain into inch thick slices and put into a large bowl. Sprinkle about 1 ½ tbsp of salt over plantains and toss so that each piece is covered and set aside. Pour oil into large skillet enough to cover the bottom and about ½ inch deep. Once oil is heated, place plantains in skillet. Cook for about 5 mins flipping to evenly brown on each side. Take out of pan letting excess oil drip off. Place on plate and quickly use a large spoon to press down to desired thickness they should be soft and easy to flatten. After you have flattened each piece place them back into the hot oil and fry again for about 5 minutes flipping to even crisp and get golden brown. When done place onto plate with a paper towel to soak up oil. Slice up queso fresco to place on top and then top with your favorite Terrapin Ridge Garnishing Squeeze!

    Buffalo Ranch Chicken Pizza

    Pre-made pizza crust
    black beans, rinsed and drained
    charred corn, removed from cob
    grape or cherry tomatoes, chopped
    avocado, chopped
    cilantro, chopped
    grilled chicken w/ Garlic & Herb Vinaigrette from previous recipe
    Lovera's Mike's Original Smoked Cheese, or any smoky cheese, grated
    Grill chicken as indicated on previous recipe. After chicken rests and has been brushed with Buffalo Ranch, cut into cubes or thin slices. Spread pizza crust with desired amount of Buffalo Ranch. Top with chicken, black beans, corn, tomatoes, avocado and cheese. Drizzle desired amount of Buffalo Ranch Garnishing Sauce over top. Place on grill until heated thru and cheese is melted. Remove from grill and top with cilantro.
