    Easter Dinner Ideas

    Our marketing specialist, Clare O'Donnell, wanted to show how she uses Terrapin Ridge in her Easter Dinner. See below for how to make roasted pineapple habanero ham, bacon jam mac and cheese, and more!

    Spring Asparagus Recipe:
    Ingredients:

    1 bunch of asparagus, trimmed
    1 bottle of Terrapin Ridge Farms Dijon Mustard Vinaigrette or Lemon Honey Vinaigrette
    I cup (stick) of butter, melted

    Directions:

    Pre-heat oven to 425 degrees farenheit. In a mixing bowl mix together 1 cup of Dijon Mustard Vinaigrette (or Lemon Honey) and 1 cup of softened butter. Mix as much as possible until it is almost perfectly blended.

    Lay the asparagus on a baking sheet. Brush with the butter and vinaigrette mixture. Place baking sheet in oven and bake for approximately 15 minutes! Cool and enjoy!

    Pesto Asparagus Recipe:
    Ingredients:
    1 bunch of asparagus
    Olive Oil
    Terrapin Ridge Farms Pesto Aioli

    Directions:
    Pre-heat over to 425 degrees. After rinsing the asparagus place it on a baking sheet. Drizzle and rub in olive oil. Cook at 425 degrees for 15 minutes. Once cooled, drizzle in Terrapin Ridge Farms Pest Aioli.

    Bacon Jam Mac and Cheese:
    Ingredients:
    Terrapin Ridge Farms Hot Pepper Bacon Jam
    Salt for the boiled water
    1/2 pound pasta of your choice (we used macaroni)
    2-3 oz White Cheddar Cheese
    2-3 oz Gouda
    2-3 tbs milk

    Directions:
    Bring a 2-quart pot of water to a boil. Salt the water generously. Add the pasta and cook, stirring occasionally, until just tender to the bite, or al dente. Before draining, use a heavy liquid measuring cup to pull out 3/4 cup of the pasta water; set aside. Drain the pasta and return the pot to the heat.

    Heat the butter in the pasta pot, then add the cooked pasta. Stir in 1/2 cup of the reserved pasta water. Add the White Cheddar cheese and stir until smooth. Add the gouda, milk, and Terrapin Ridge Farms Hot Pepper Bacon Jam and mix well. Dribble in extra pasta water as needed to make a soft, creamy sauce. Serve immediately!

    Creamy Potato Salad:
    Ingredients:
    3 ibs russet potatoes
    1/3 jar Terrapin Ridge Farms Creamy Garlic Mustard
    2 green bell peppers diced
    3 stalks of celery diced
    1/2 cup mayonnaise
    Optional: Chopped Onions

    Directions:
    In a large pot, boil potatoes until they are tender (around 30 minutes). When finished, drain and peel. Cut into around 1-2 inch chunks. In a different bowl, combine potatoes, Terrapin Ridge Farms Creamy Garlic Mustard, green bell peppers, 3 stalks of celery, mayonnaise and chopped onions. Cool completely and then serve! (We suggest preparing ahead of time!)

    Pineapple Habanero Ham:
    Ingredients:
    1 pre-cooked ham
    1 bottle Roasted Pineapple Habanero Sauce

    Directions:
    Pre-heat oven to 350 degrees. Rub ham with Roasted Pineapple Habanero Sauce. Cook until hot and the glaze has crystallized. Pour remaining sauce on top of the ham and serve!
