Bacon Aioli Smash Burger
1 lb Ground Beef (about 6 burgers)
Bacon Aioli Squeeze Garnishing Sauce
Break apart and season 1 lb of ground beef liberally with salt + pepper and the add one tablespoon of Bacon Aioli. Get the frying pan or the grill on high to sear the patties and get them extra crispy. Place patties on pan and smash them down for a few seconds on the pan. If your stove/grill is extra hot, they should cook quickly in about 4-5 minutes. Flip the burgers halfway through and add the American cheese on the flipped side. Smother Bacon Aioli on top of one side of each bun and then assemble the burgers. We like this burger with just cheese and Bacon Aioli, its extra juicy and smokey. However, add whatever toppings you like and enjoy!
Shrimp and Corn Boil with Chile Lime Aioli
1 head of Garlic
Old Bay Seasoning (or your preferred fish seasoning)
Chile Lime Aioli Squeeze Garnishing Sauce
Corn chopped into thirds
Shrimp, frozen and freshly thawed preferred
1 can of beer
Optional: crab, lobster, oysters, clams, etc.
Bring a large pot of water and 1 can of beer to a boil. Add in sliced onion, garlic, and old bay seasoning. Once boiling, add in diced red potatoes. Let cook for about 10-15 minutes. Add in the corn and cook for about 3 minutes, then add in the sausage and cook another 4 minutes. Make sure to add the shrimp in last as it cooks quickly and will become a weird texture if overcooked. Stir in the shrimp for 1-2 minutes, until just slightly pink. Drain the water. Traditionally shrimp and corn boils are openly served on a table with newspaper/parchment paper/any clean large place you can serve it. Pour the mixture on the table. Drizzle melted butter and a squeeze of lemon on top and then serve with Chile Lime Aioli Squeeze! We like to accompany our shrimp and corn boils with Hot Pepper Bacon Jam cornbread and a cold beer. Enjoy!
