    1. Cranberry Ricotta Phyllo Cups

    Cranberry Ricotta Phyllo Cups

    Ingredients

    • 24 mini phyllo cups (frozen)
    • ½ cup cream cheese, softened to room temperature
    • 1 cup whole milk ricotta cheese
    • 1 teaspoon vanilla extract
    • 1/4 cup Terrapin Ridge Farms Cranberry Relish with Grand Marnier
    • Rosemary sprigs, for garnish (optional)

    Directions

    1. Place phyllo cups onto a large serving platter and let them thaw while you prepare the filling.
    2. In a medium bowl, whisk together the cream cheese, ricotta cheese, and vanilla until smooth and creamy. Chill mixture in the refrigerator for 30 minutes to set.
    3. Fill phyllo cups with ricotta cream cheese mixture and dollop ½ teaspoon of Cranberry Relish on top. Place small rosemary sprigs on top of each cup, if using. Serve immediately or place in refrigerator until ready to serve.

    2. Gluten-Free Crispy Pan-fried Brie with Cranberry Relish

    Gluten-Free Crispy Pan-fried Brie with Cranberry Relish

    Ingredients

    • 1 (16-ounce) wheel of brie
    • ¼ cup gluten-free flour blend
    • 2 large eggs, beaten with a splash of water
    • 1 cup gluten-free seasoned breadcrumbs (or seasoned breadcrumbs)
    • 1 cup gluten-free panko breadcrumbs (or panko breadcrumbs)
    • 2 tablespoons olive oil
    • 2 tablespoons butter
    • ½ cup Terrapin Ridge Farms Cranberry Relish with Grand Marnier
    • Gluten-free crackers, apple slices, or veggie sticks for serving

    Directions

    1. Place the wheel of brie in the freezer for 15 minutes.
    2. Place the eggs, flour, and breadcrumbs in separate shallow bowls or dishes. Dip the brie into the flour coating the entire round. Then dip into the egg making sure the egg coats the entire cheese. Press into the breadcrumbs until evenly and fully coated.
    3. Line a plate with paper towels. Put the oil and butter into a skillet large enough to hold the brie and heat over medium-high heat until the butter melts and starts to sizzle. Add the brie and cook for 2 – 3 minutes or until golden brown. Flip and cook the other side for 2 – 3 minutes or until golden brown. Using a large spatula, remove and place it on the paper towel-lined plate. Let sit for a minute or two before transferring to a serving plate. Top with the Cranberry Relish.
    4. Serve with gluten-free crackers, apple slices, or fresh veggies.

    3. Pear & Brie Wreath with Cranberry Relish with Grand Marnier

    Pear & Brie Wreath with Cranberry Relish with Grand Marnier

    Ingredients

    • Two 8-ounce tubes Crescent Roll dough
    • ¼ cup Terrapin Ridge Farms Cranberry Relish with Grand Marnier, plus more for serving
    • 1 ripe Anjou or Bartlett Pear—stemmed, cored and thinly sliced
    • One 8-ounce wheel of brie, sliced ¼-inch thick 
    • 2 teaspoons fresh thyme leaves, plus more for garnish
    • 1 egg, lightly beaten
    • Flaky sea salt, for sprinkling
    • Fresh raspberries, for garnish (optional)

    Directions

    1. Preheat the oven to 375°F and line a large rimmed baking sheet with parchment paper.
    2. Set a 4- to 5-inch bowl face down in the center of your baking sheet. Separate the crescent roll triangles at the perforations, being careful not to stretch out the dough. Arrange them slightly overlapping in a circle around the bowl with the points facing out like a star. Spread the relish in a ring around the dough. Top with the sliced pears, brie, and fresh thyme.
    3. Carefully remove the bowl. Working one piece at a time, tuck the tip of each triangle up and over the filling and then gently lift the wreath and tuck it underneath. Repeat with the remaining dough, working your way around the wreath.
    4. Brush the wreath all over with egg wash and sprinkle with flaky sea salt. Bake the wreath at 375°F for 10 minutes. Cover loosely with foil and bake for about 10 to 15 minutes more, or until the top is a deep golden brown and the thickest part of the wreath is baked through. Remove from the oven and let cool slightly.
    5. Garnishing with fresh raspberries, if using, and more fresh thyme leaves. Slice and serve with more Cranberry Relish with Grand Marnieron the side.

    Ingredients

    • Terrapin Ridge Farms Cranberry Relish with Grand Marnier
    • Brie (sliced)
    • Aged cheddar (cubed)
    • Cranberry-infused cheese (sliced)
    • Swiss or Havarti (sliced)
    • Cured Meats (Prosciutto, Salami, etc.)
    • Fresh Fruits (Raspberries, Blackberries, Red Grapes, Blueberries, Dried Apricots, Dried Orange Slices)
    • Nuts (Almonds, Candied Pecans, Walnuts)
    • Olives (green or kalamata)
    • Crackers and Breadsticks of choice

    Directions

    1. Use a large wooden serving board or platter as your base.
    2. Place the Brie near one corner, slice other cheeses and distribute them evenly across the board. Place the cranberry cheese near the center to highlight its color.

    Cranberry Relish and Brie Stuffed Sweet Potatoes (Gluten-free, Grain-free, Egg-free, Soy-free)

    Ingredients

    • 4 sweet potatoes (scrubbed and dried)
    • 2 tablespoons olive oil
    • 1 teaspoon kosher salt
    • 6 ounces brie cheese, rind removed and cubed
    • ½ cup Terrapin Ridge Farms Cranberry Relish with Grand Marnier
    • ¼ cup toasted pecans or walnuts
    • Fresh parsley or thyme, for garnish

    Directions

    1. Preheat oven to 400°F.
    2. Rub sweet potatoes with olive oil and sprinkle with kosher salt.
    3. Place on a baking sheet and bake for 50–60 minutes, until fork tender. Once baked, carefully slice each potato lengthwise and gently fluff the insides with a fork.
    4. Add a few cubes of brie to each potato, letting the residual heat melt the cheese.
    5. Spoon 2–3 tablespoons of Terrapin Ridge Farms Cranberry Relish with Grand Marnier over each potato.

    6. Cranberry Relish Brie Pizza

    Cranberry Relish Brie Pizza

    Ingredients

    • 1 crescent roll can
    • 1 apple
    • 1 jar Terrapin Ridge Farms Cranberry Relish with Grand Marnier 
    • 1/2 round wheel of Brie

    Directions

    1. Heat oven to 375°F (or 350°F for nonstick cookie sheet).
    2. Roll out crescent roll into a square and cook for 9 minutes. Remove from oven.
    3. Spread ¾ jar to 1 whole jar of Cranberry Relish with Grand Marinier over the dough.
    4. Slice 1 apple very thin, place on top of relish.
    5. Cut ½ round of brie into 1 inch pieces and place on top.
    6. Reheat in oven for 4-5 minutes until cheese melts, serve!
