    The holiday season can be time-consuming and before you know it, it's the night before Joe's Friendsgiving dinner and you have no idea what to bring! No worries, we've got you covered with these simple yet unforgettable dishes below.

    Autumn Vegetable Salad
    Ingredients:
    2 large sweet potatoes cubed
    2 turnips cubed
    8 red skinned potatoes cubed
    1 sweet onion optional
    3 large carrots
    1 bottle Terrapin Ridge Farms Apple Cider Maple Balsamic Vinaigrette
    1 pomegranate
    1 bunch lettuce of your choice, kale is pictured
    Kosher salt and fresh ground pepper to taste
    Directions:
    Wash lettuce of your choosing. In a large bowl add 1/4 cup Apple Cider Maple Balsamic Vinaigrette. Using your hands massage the dressing into the lettuce and set aside. Pre heat oven to 420 ° to a baking sheet add the cut vegetables. Toss with 1/4 cup Apple Cider Maple Balsamic Vinaigrette. Toss to coat all the vegetables. Roast for 30-40 minutes tossing half way cooking time. As oven temps vary times will also vary. Check at 30 minutes. Vegetables should be cooked through and browning on the edges. Add the cooked vegetables to the lettuce. Add additional dressing if desired. Garnish with apple and top with pomegranate. Serve warm or at room temperature.

    Hatch Chili Cream Cheese Corn Souffle *Terrapin Fav
    Ingredients:
    1 can corn, drained
    1 can creamed corn, with liquid
    1 box Jiffy corn muffin mix, unprepared
    1 jar Terrapin Ridge Farms Hatch Chile Cream Cheese Dip
    1/2 cup sour cream
    Directions:
    Preheat oven to 350 degrees and lightly grease a 9" square baking dish. In a medium bowl, mix all ingredients together and bake for 50-60 minutes or until souffle is golden brown and center is firm and set. This has become a go to for us! One of the first side-dishes to go.

    Apple Maple Bacon Jam Nachos*Terrapin Fav
    Ingredients:
    5 Apples honey crisp
    1 jar Terrpin Ridge Farms Apple Maple Bacon Jam
    4 oz blue cheese
    1 cup walnut pieces
    1/4 cup lemon juice
    Directions:
    In a saute pan toast the walnut pieces until slightly brown. Use medium heat. This happens
    quickly and can burn easily so stay with it tossing the nuts in the pan. About one minute. Set
    nuts aside.
    Cut apples in half, remove core then slice into 1/8th inch slices. Place into a shallow bowl and
    add lemon juice to keep the apples from turning brown.
    Remove apples from lemon juice. Use a paper towel to remove excess moisture. Arrange on a
    plate in a spiral pattern.
    Drizzle Apple Maple Bacon Jam over apples.
    Top with blue cheese and walnuts.
    Enjoy.

    Crock-Pot Step Mashed Potatoes
    Ingredients:
    5 pounds potatoes
    1 stick butter
    ¾ cup chicken broth
    1 jar Terrapin Ridge Farms Onion Blossom Horseradish Dip
    Directions:
    Peel and cut potatoes into chunks. Place potatoes and broth into your slow cooker. Cook on high 3-4 hours, stirring every hour or so. Once tender, hand mash the potatoes until smooth. Stir in butter and Terrapin Ridge Farms Onion Blossom Horseradish Dip. Serve as is or keep warm in crock-pot until party time!
