Asparagus Flatbread with Pesto Aioli

This quick, easy flatbread makes for a great appetizer alongside a nice glass of white wine or
light dinner for two with a simply dressed green salad. Our creamy Pesto Aioli Squeeze adds a
touch of garlic and aromatic basil that pairs perfectly with the zippy goat cheese, fresh lemon,
and crisp asparagus. Pro-tip: for an extra crispy crust, bake your flatbreads on the lowest rack in
your oven and place the baking sheet in the oven while it’s preheating.
Ingredients
One 12-inch store bought flatbread
11⁄2 Tablespoons olive oil, plus more for drizzling
4 ounces goat cheese, at room temperature
1⁄2 cup shredded mozzarella cheese

Terrapin Ridge Farms Pesto Aioli Squeeze, for drizzling
1⁄2 pound asparagus, trimmed and halved lengthwise if large
Kosher salt and freshly ground black pepper
Freshly grated lemon zest and fresh basil leaves, for garnish
Crushed red pepper flakes, for sprinkling
Directions
Preheat the oven to 425°F and position a rack on the lowest position in your oven. Set a rimmed baking sheet on the rack while the oven heats up.
Brush your flatbread all over with the olive oil and set on a piece of parchment paper. On one side of your flatbread, spread the goat cheese in an even layer, leaving a 1⁄4 inch border. Drizzle with some of the Pesto Aioli. Arrange your asparagus diagonally across your flatbread. Drizzle with a little more olive oil and season with salt and pepper. Top with the mozzarella.
When the oven is ready, carefully remove the preheated baking sheet and slide the parchment paper onto the hot surface. Return to the oven and bake for about 12 minutes, or until the flatbread is crispy and beginning to brown and the asparagus is crisp-tender.
Drizzle with more Pesto Aioli and garnish with freshly grated lemon zest and torn basil leaves. Sprinkle the flatbread with crushed red pepper flakes. Cut into wedges and serve right away. Enjoy!
