Line a sheet pan with parchment paper.
Cut cauliflower head into bite sized pieces. Cut carrots into even length pieces, cutting thicker ends in half or quarters. Spread onto sheet pan.
Spray or drizzle with olive oil or macadamia oil, salt and pepper.
Roast 425F, approximately 25 minutes, toss once or twice.
Remove from oven and toss with 2-3 tbsp of Terrapin Ridge Farms Hot Pepper Bacon Jam.
Return to oven to heat through another 2 minutes.
