You’ve likely enjoyed a burrito bowl at some point – whether from Chipotle or whipped up at home. But have you ever had a BBQ burrito bowl? You’re in for a treat. It has all the burrito bowl components like rice, beans, meat, cheese, and some avocado… but it also has a sweet and tangy kick from a BBQ dry rub and/or BBQ sauce. In our version, we opted for a simple dry rub to the chicken paired with a drizzle of our creamy and subtly sweet honey BBQ aioli.

Ingredients
- 2 pounds boneless skinless chicken breasts or thighs
- 2 tablespoons your favorite BBQ rub
2 tablespoons avocado oil
3 cups rice, cooked
- 1 15-ounce can black beans
- 6 ounces pepper jack or Monterrey jack cheese
- 2 small avocados
1 cup pico de gallo
- ½ cup green onion, chopped (white and green parts)

2 limes, halved
- ¼ cup fresh cilantro, chopped
- Salt
- 2 large (ripe) tomatoes, seeded and chopped
- ½ white onion, finely chopped
- 1 jalapeño, de-veined and seeded, finely chopped
- 2 garlic cloves, minced
- ⅓ cup cilantro, finely chopped
- Juice from one lime

For the Pico de Gallo:
Directions
Make the pico de gallo – add tomato, onion, jalapeño, garlic, cilantro, lime juice, and salt to a bowl and set aside.
Pat chicken dry and coat with your favorite BBQ rub.
Add avocado oil to a large cast iron pan or grill pan and bring to medium-high heat.
Cook chicken for 4-5 minutes on each side, or until internal temperature reads 165 degrees with an instant read thermometer.
While your chicken cooks, prepare the rest of the ingredients – drain and rinse the black beans, grate the cheese, slice the green onions, and pit and slice the avocados.
Chop the chicken and assemble the bowls. Add rice to each bowl and in sections, top with chicken, beans, cheese, pico de gallo, green onions, and avocado slices, adding a sprinkle of salt to the beans and avocado.
Squeeze half a lime over each bowl and top with a generous drizzle of our honey BBQ aioli. Then, top with chopped cilantro.
