Ingredients
6 oz tortilla chips

6 T Terrapin Ridge Farms Pineapple Chile Lime Salsa
¼ chicken stock
4 eggs
6 oz sour cream
1 onion sliced into rings
1 each Fresh avocado
4 T Queso fresco
4 T Chopped cilantro
Directions
Pre-heat oven to 425 degrees. In a large mixing bowl, mix the chicken stock and Terrapin Ridge Farms Pineapple Chile Lime Salsa with the tortilla chips. Toss well and spread the chips on a sheet tray. Bake for about 7 minutes or until it is lightly toasted.
Heat a non-stick pan over medium heat and add 1 tablespoon of olive oil. Add 4 eggs and cover with a lid. Reduce the heat to medium low heat and cook until the egg white has set. Carefully add the eggs on top of the baked chilaquiles.
Top with sour cream, onions, avocado, queso fresco and cilantro and serve immediately.
