Champagne Garlic Honey Mustard Chicken

Ingredients
- 1 1/4 pounds boneless skinless chicken breasts
- 2 Tsp. Olive oil
- Salt & Pepper to taste
- 1 Tbsp. Chopped parsley
- Cooking spray

1 Jar Terrapin Ridge Farms Champagne Garlic Honey Mustard
Directions
Preheat oven to 375° F. Heat olive oil in a pan over medium high heat.
Season chicken breasts on both sides with salt and pepper. Place chicken in pan and sear on both sides until golden brown.
Coat a rectangular baking dish with cooking spray.
Spread half of the Champagne Garlic Honey Mustard into the bottom of the dish.
Arrange chicken breasts on top of mustard, then drizzle the remaining mustard on the top of the chicken. Cover with foil, then bake for 20 minutes.
Uncover and bake for an additional 10 minutes or until chicken is cooked through. Garnish with parsley, then serve.
