Chippy Boys with Balsamic Onion Jam

Our spin on this viral recipe uses our sweet and tangy Balsamic Onion Jam. We like to make two layers of chips with crumbled blue cheese and dollops of jam so that every bite is perfect. No need to toss. This crunchy-cheesy-salty-sweet snack is addictive and is great alongside a cold beer at the end of the day or a late-night bite when those unexpected cravings hit.
Ingredients
- One 8-ounce bag kettle chips (see Note)
- 4 ounces gorgonzola or Dutch blue cheese, crumbled (see Note)

½ cup Terrapin Ridge Farms Balsamic Onion Jam
- Minced chives, for garnish
- Freshly cracked black pepper
Directions
Preheat the oven to 450°F and line a rimmed quarter sheet pan with parchment paper. (Alternatively, you can also use a metal 9-by-13-inch baking pan.) Spread half of the potato chips in an even layer. Crumble half of the blue cheese over the chips and then dollop half of the jam over the chips. Repeat this layering process one more time with the remaining chips, blue cheese, and jam.
- Bake for 3 to 5 minutes, or until the cheese is melted and the chips are toasty and browned in spots. Garnish with fresh chives and a few cracks of black pepper and eat right away!
Recipe Note
Note: Feel free to use the kettle chip of your choice, but we highly recommend a low-sodium option since the blue cheese in itself is quite savory. We tried this with Cape Cod low-sodium potato chips and it was perfect. Also, when picking out your blue cheese, avoid the pre-crumbled stuff because it doesn’t melt as well!
