Grease pan with ample butter.
Add chopped onion to heated butter.
Once the onions start to brown, add sliced or chopped leftover potatoes to pan and cook until crispy.
Add chopped Corned Beef to the pan.
After Corned Beef is heated, crack 1 or 2 eggs on top. After eggs are fried, remove pan from heat.
Serve in pan with Sriracha Horseradish Squeeze drizzled on top. Or, pour Corned Beef Hash w/egg onto plate(s) and drizzle with Sriracha Horseradish Squeeze.
