Creamy Chipotle Smashed Potatoes

Ingredients
- 2 lbs Potatoes, peeled and cubed
- 1 tsp Ground black pepper
- 1 Tbsp Salt
- 2 Tbsp Softened butter
- ½ cup Shredded Cheddar Cheese

½ cup Terrapin Ridge Farms Creamy Chipotle Pepper Dip
- 1/4 cup Chopped fresh cilantro
Directions
Place the potatoes into a large pot and cover with salted water.
Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes.
Drain into a collander and allow to dry for a minute or two.
Return the potatoes to the pot, and mash with the black pepper, salt, and butter until smooth.
Fold in the cheddar cheese and Terrapin Ridge Farms Creamy Chipotle Pepper Dip until the cheese has melted.
Stir in the cilantro. ENJOY!
