Crispy Feta Fried Egg Toast with Hot Pepper Bacon Jam

Crispy feta fried eggs have been taking over the internet and for very good reason—they’re delicious and you can put them on anything! Here, we serve one atop a thick piece of good toast smeared with our crowd-favorite Hot Pepper Bacon Jam. The crumbled feta cheese melts in the skillet, creating a crunchy, salty frico-like halo around the velvety fried egg. Since this fork-and-knife toast calls for so few ingredients, try to use the best you can find. We’re talking crusty bread, feta cheese packed in brine, good eggs, and, of course, our Hot Pepper Bacon Jam!
Ingredients
One ¾-inch thick slice crusty bread
- 3 Tablespoons Terrapin Ridge Farms Hot Pepper Bacon Jam
- 1 large egg
- ⅓ cup crumbled feta cheese
- Freshly ground black pepper
- Minced chives, for garnish
Directions
Toast your bread and spread 2 tablespoons of the jam from end to end.
- Heat a small nonstick skillet over medium heat. Crumble the feta around the perimeter of the pan (if you’re using a larger skillet, crumble the feta in a small circle about the size of a fried egg). Immediately crack the egg in the middle of the circle of feta. Cover the skillet and cook, reducing the heat to low if necessary, until the egg whites are set, the yolk is still runny, and the feta is beginning to brown and crisp around the edges, about 3 minutes. Transfer the fried egg to the toast.
- In a small heatproof bowl, microwave the remaining 1 tablespoon of jam for about 10 seconds, or until slightly runny. Drizzle the jam over the fried egg toast and garnish with cracked black pepper and minced chives. Eat right away!
