Gluten-Free Pineapple Aji Amarillo Chicken Lettuce Wraps

Ingredients
2 tablespoons olive oil
1 ½ pounds boneless, skinless chicken thighs, cut into small bite-sized pieces
Kosher or fine sea salt
Freshly ground black pepper
2 teaspoons garlic powder
1 small red onion, finely diced
1 large carrot, shredded

½ cup Terrapin Ridge Farms Pineapple Aji Amarillo Jam
2 tablespoons tamari, gluten-free soy sauce, or coconut aminos
1 tablespoon rice vinegar
1 teaspoon fresh grated ginger
1 head butter lettuce or Bibb lettuce, leaves separated
¼ cup fresh cilantro leaves
¼ cup chopped green onions
Optional garnish: chopped peanuts or cashews
Directions
Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season lightly with salt, pepper, and the garlic powder. Sauté until golden brown and cooked through (about 6–8 minutes). Remove from the pan and set aside.
In the same skillet, add onion, bell pepper, and carrot. Sauté until softened (3–4 minutes).
Stir in Terrapin Ridge Farms Pineapple Aji Amarillo Jam, tamari, rice vinegar, and ginger. Bring to a gentle simmer.
Return chicken to the skillet and toss in the sauce until fully coated and glossy. Let cook 2–3 minutes.
Place a few spoonful’s of chicken mixture into each lettuce leaf. Top with cilantro and green onions. Garnish with chopped peanuts or cashews if desired and serve.
