Ingredients
1 Chicken Breast

1 Cup Terrapin Ridge Farms Apple Cider Maple Balsamic Vinaigrette
4 Cups Spring Mix
- 1 ripe pear, sliced
½ Cup Crumbled Goat Cheese
½ Cup raw pecan halves
½ Cup Raw Pecan Halves
1 Tablespoon Butter
Salt and Pepper
Directions
Sprinkle chicken breast with salt and pepper and marinate in ½ cup of vinaigrette for at least 30 minutes.
In a pan over medium heat, cook chicken for about 8 minutes on each side or until cooked through and set aside.
Divide spring mix between 2 salad bowls and sprinkle with salt.
Top spring mix with sliced pears and goat cheese.
Melt butter in a small pan over medium heat and toast pecans for about 5 minutes.
Slice chicken breast and top salads with chicken and pecans.
Drizzle remaining vinaigrette over each salad.
