Grilled Sweet Potato & Smoked Sausage Skewers with Pineapple Rum Butter Glaze

Ingredients
1-2 Large Sweet Potato Peeled (you will need 24 1.5” cubes)
12 oz Smoked Kielbasa (cut into 12 pieces)

1/3 cup Terrapin Ridge Farms Pineapple Rum Butter Sauce
Kosher Salt
Olive Oil
12 6” Bamboo Skewers or Kabobs
Directions
Peel the sweet potato and cut into 1.5” cubes. Add the sweet potatoes to a small pot of water and bring to a simmer for 4 minutes. The sweet potato should still be firm but should barely begin to soften. Strain and cool completely. Skewer 1 piece of sweet potato followed by one piece of sausage and then one more piece of sweet potato.
Pre-heat the broiler and line a ½ sheet pan with foil. Lightly brush these skewers with olive oil, and lightly season with salt. Broil until they have browned on each side. Brush the skewers with the raspberry chipotle glaze and return them to the oven. Continue to broil until the sauce becomes tacky.
- Place on your serving platter and season again lightly with salt.
