The ultimate comfort food right here, but a grownup version for a palate that’s a little more refined than what we had as kids. This grilled cheese is loaded (and we mean loaded) with rich, melty brie and aged cheddar and then topped off with granny smith apple slices as well as our delicious creamy garlic mustard squeeze, which adds the perfect touch of a tanginess. Sandwiched between buttered sourdough, grilled cheese simply doesn’t get better than this.

Ingredients
2 slices sourdough bread*
2 ounces aged white cheddar, grated
2 ounces brie, rind removed and thinly sliced*
½ granny smith apple, thinly sliced (you’ll want ¼ inch 6-8 slices)
½ tablespoon butter, softened

1 teaspoon Terrapin Ridge Farms Creamy Garlic Mustard, plus extra for dipping
Directions
Place two bread slices on a cutting board or plate and spread the outsides of the slices with butter. Then, spread our creamy garlic mustard squeeze on the insides of the slices. Top one slice with half the grated cheddar, then the brie, then the apple slices, and then the rest of the grated cheddar. Place the second slice of bread on top.
Preheat a seasoned cast-iron skillet* over medium heat. Add the sandwich. Once the cheese begins to melt and the bread on the bottom is crisped and golden, carefully flip the sandwich. Do not press down on the sandwich. Grill until all the cheese is fully melted and the other slice of bread is golden.
Remove from heat. Let sit for 2-3 minutes before cutting in half and serving.
Recipe Note
*We like a large sourdough loaf, but another sturdy bread will work too. If you’re working
with smaller slices, you may want to reduce the qualities by 25%.
*Brie can be hard to slice since it’s a very soft cheese. Feel free to place it in the freezer for
15 minutes prior to slicing.
