Hawaiian Pork Luau Burger with Amber Ale Pineapple Jalapeno Jam

The secret to this juicy Hawaiian-inspired burger is our Amber Ale Pineapple Jalapeño Jam. The sweet-and-spicy jam both flavors the pork patties and gives them a crisp, caramelized crust. For the best char on your burger, we like to use a cast-iron skillet. The meat cooks in its own fat, enhancing the flavor and making for a super tender burger with an even sear. You can make this recipe inside on your stove-top, or put the skillet right on the grate of a hot grill. If you’re looking for a little more kick, this burger would also be delicious with some thinly sliced fresh jalapeño on top.

Ingredients
1½ pounds ground pork

3 Tablespoons Terrapin Ridge Farms Amber Ale Pineapple Jalapeño Jam, plus more for serving
- 3 Tablespoons soy sauce
- Kosher salt
- ½ cup mayonnaise
- 2 Tablespoons canola or grapeseed oil
- Four ½-inch thick cored pineapple rings (see Note)
- 4 slices Pepper Jack cheese
- 4 soft Hawaiian buns, split and toasted
- Melted butter, for brushing (optional)
- Butter lettuce and thinly sliced red onion, for serving
Directions
In a large bowl, gently combine the pork with the 3 tablespoons of Amber Ale Pineapple Jalapeño Jam and 1 tablespoon of the soy sauce. Form the pork into four 4-inch wide and ¾-inch-thick patties; season lightly with salt. Transfer to a plate.
- In a small bowl, whisk the mayonnaise with the remaining 1 tablespoon of soy sauce.
- On a grill or stovetop, heat a 12-inch cast-iron skillet over moderate heat. Add 1 tablespoon of the oil. When the oil is shimmering, add the pineapple rings and cook, turning once, until charred, 2 to 3 minutes per side (you can also do this on the grate, if you are using a grill). Transfer to a plate.
- Add the remaining 1 tablespoon of oil. When the oil is shimmering, add the pork patties, being sure not to crowd them. If they are touching, then they won’t brown well. If necessary, cook in batches. Cook the burgers over moderate heat until a deep brown crust has formed, about 5 minutes. Flip the burgers and cook for 4 minutes. Top each patty with a slice of cheese and cook until the cheese is melted and the burgers are nicely browned and just cooked through, about 4 minutes more. Transfer the pork burgers to a plate and let rest for 5 minutes.
- Smear the cut sides of the buns with the soy mayo. Top each with a burger patty, a spoonful of the Amber Ale Pineapple Jalapeño jam, a pineapple ring, butter lettuce and red onion. Close the burgers. If desired, brush the buns with melted butter. Transfer to plates or a platter and serve right away.
