Honey Ginger Wasabi Salmon with Cauliflower Rice

Ingredients
- 3 tbsp Terrapin Ridge Farms Ginger Wasabi Sauce
- 2 tbsp Soy Sauce
- 2 tsp Mirin
- 1 tbsp Honey
- 1 10 oz Cauliflower Rice, frozen
- 2 8 oz Salmon Filets
- 5 oz Frozen French cut green beans
- 3 tbsp Stir Fry Oil or Peanut Oil
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/4 Red onion, sliced
- 16 oz Fresh Sliced White Mushrooms
- 1 bunch Broccolini or Chinese Broccoli
- 1/4 cup Cilantro, chopped
- 2 garlic cloves, crushed
Directions
Cook cauliflower rice according to package and set aside.
Season salmon filets with salt and pepper. Grill filets to medium well, 130°F. Set aside and cover with foil to rest.
Chop onion and broccoli then saute’ in stir fry oil over medium heat in a wok.
Add crushed garlic. Add green beans and mushrooms. Lightly toss all ingredients together.
In a small bowl, whisk together 3 heaping tbsps of Terrapin Ridge Farms Ginger Wasabi Sauce, 2 tbsp of soy sauce, 2 tsp mirin, and 1 tbsp honey.
Add the sauce to the vegetable stir fry and toss all ingredients together.
Serve stir fried vegetables and grilled salmon over rice.
Garnish with chopped cilantro. Serve hot.
