Hoppin Jalapeno White Chicken Chili

Soup season just may be our most-loved season in the kitchen. It means warm food that’s
comforting and not overcomplicated. We love soups, stews, and chili of any kind but this
kicked-up white chicken chili is a new favorite. Using chicken from a store-bought
rotisserie chicken, you can make this warm-your-bones dinner in less than 30 minutes. We
must note though, most chili and soups taste even better on day two, so if you can make
this a day ahead, definitely do so!
We simplified this white chicken chili even further too, by eliminating most of the standard
spices and replacing them with our creamy and perfectly spicy Hoppin’ Jalapeno Dip. This
dip is loaded with flavor and took this chili to the next level.

Ingredients
1 tablespoon avocado or olive oil
1 medium white or yellow onion, diced
2 poblano peppers, diced
1 tbsp. cumin
2 tsp. garlic powder
2 tsp. salt
25-30 ounces cannellini beans, drained and rinsed
3 cups chicken stock

¾ cup Terrapin Ridge Farms Hoppin’ Jalapeno Dip
3 cups shredded rotisserie chicken (or shredded cooked chicken)
Directions
In a large pot, heat the oil over medium high heat. Sauté the onion and poblano peppers until soft (about 4-5 minutes).
Add your chicken, cumin, garlic powder, and salt. Sauté another 1-2 minutes.
Add the beans, chicken stock, and Hoppin’ Jalapeno Dip. Stir and let simmer on low for 20 minutes*
Serve and top with chopped avocado, shredded cheese, sour cream, and cilantro, if desired.
Recipe Note
*This Chili is even better the next day – so if you can, make it one day ahead of time. Then,
simmer until thoroughly heated the day you serve it.
