You may have seen a version of this salad on Instagram or Pinterest if you were perusing salad recipes. It went viral recently and for good reason. This quick and easy Italian Grinder Salad is loaded with all the flavors and textures you love in an Italian sub sandwich (“grinder,” “hero,” etc.) but without the bread. And we can assure you, you’re not going to miss the bread. It is that good. We also made it even easier with the addition of our very own Creamy Italian White Balsamic Dressing, so you don’t have to make a dressing from scratch.

Ingredients
1 head iceberg lettuce
¼ lb. ham, chopped
¼ lb. salami, chopped
¼ lb. capicola, chopped*
¼ lb. provolone, chopped
½ red onion, very thinly sliced
1 large, very ripe tomato, chopped small
1/3 cup pepperoncini or banana peppers, chopped
1/3 cup parmesan cheese, finely grated
1 teaspoon Italian seasoning
Salt and pepper

3 tablespoons Terrapin Ridge Farms Creamy Italian White Balsamic Dressing
1 ½ tablespoons mayonnaise
Directions
Rinse the iceberg. Then remove the first 3-5 layers of leaves until you get to the lighter and more crisp leaves (feel free to save first few layers for another recipe). Cut the iceberg head in half then continue cutting in about ¼ inch sections, so it resembles lettuce shreds. Place the shreds in a large bowl.
Top the lettuce with chopped deli meats and cheese. Then, add chopped tomatoes, pepperoncini or banana peppers, parmesan cheese, Italian seasoning, and salt and pepper.
In a small bowl, whisk together Terrapin Ridge Farms Creamy Italian White Balsamic Dressing and mayonnaise. Pour on top of the salad and toss to combine.
Serve immediately.
Recipe Note
*Capicola is a relatively spicy Italian deli meat. If you’re sensitive to spice, we suggest
substituting it for pepperoni or more ham and salami.
