Italian Hoagie with Bleu Cheese Olive Tapenade

A true hoagie stands apart from a regular sandwich thanks to the careful layering of meats and cheese. In this version, we layer ham, mortadella, soppressata, and provolone on both sides of the bread, then add fresh lettuce, tomato, and red onion, so the veggies sit right in the middle when the hoagie is folded up. To kick things up a notch, we spread a generous amount of our Bleu Cheese Olive Tapenade—its rich, salty-sweet flavor with a tangy kick from the olives and bleu cheese makes it the perfect match for this sandwich.

Ingredients
1 long loaf Italian bread, about 17-inches long, or two 8-inch hoagie buns

½ cup Terrapin Ridge Farms Bleu Cheese Olive Tapenade, plus more as needed
½ lb thinly sliced cooked ham
½ lb thinly sliced mortadella
½ lb thinly sliced salami or soppressata
½ lb thinly sliced provolone cheese
½ medium head iceberg lettuce, finely shredded (about 4 cups
½ small red onion, very thinly sliced (about ½ cup)
½ teaspoon dried oregano
Olive oil and red wine vinegar, for drizzling
Kosher salt and freshly ground black pepper
Directions
Slice the bread lengthwise, being careful not to cut it in half. Open the bread and press gently to help it lie flat. Remove some of the bread’s innards to make a shallow well for your fillings.
Slather the bread with the tapenade, covering edge to edge. Depending on the size of your bread, you may need more tapenade. Top with slightly overlapping pieces of sliced ham, covering both sides of the bread completely. Repeat with the mortadella, soppressata, and provolone.
In a medium bowl, toss the iceberg lettuce with the red onion and dried oregano. Drizzle with a little olive oil and red wine vinegar and season with salt and pepper. Pile salad down the middle of the bread.
Carefully close sandwiches and cut in half crosswise. Transfer to plates or a platter and serve right away.
