Ingredients

Butternut Squash
Sweet Potatoes
Mixed Greens
Terrapin Ridge Farms Lemon Honey Vinaigrette
Mixed Greens
Salt & Pepper
Red onions
Tomatoes
Cucumbers

Directions

Preheat your oven to 200-225 F. Peel and slice the sweet potato, then quarter each slice.
Slice the squash, and cut it into small cubes. Place in the middle of the oven, and roast for 15 minutes.
While veggies cook, slice your red onion, cucumbers, and tomatoes. Once the veggies cool down, In a large bowl, toss all the salad ingredients together.
Add the Terrapin Ridge Farms Lemon Honey dressing and lightly toss again. Season with salt and pepper to taste. Enjoy!
