Ingredients
2-3 medium russet potatoes, peeled and grated
1 small onion, grated
1 egg, beaten
2 tablespoons matzah meal
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon garlic powder (optional)
Oil for frying (I used avocado oil)
Flaky sea salt, for finishing
½ cup shredded Mexican cheese blend

Directions
Grate the potatoes and onion, then use a clean kitchen towel to squeeze out as much moisture as possible.
In a bowl, mix the grated potatoes and onion with the egg, matzah meal, salt, pepper, and garlic powder.
Heat about ¼ inch of oil in a skillet over medium heat.
Scoop small portions of the mixture into the pan, flattening them slightly. Fry for about 3-4 minutes per side, until golden brown and crispy.
Remove from the pan and drain on paper towels. Immediately sprinkle with flaky sea salt.
Top with shredded Mexican cheese while warm, so it melts slightly.
