Loaded Shawarma Fries with Harissa Aioli

Shawarma, a Middle Eastern dish known for its richly spiced meat, is the inspiration behind these loaded fries. Here, we’ve taken the warm, aromatic spices of traditional shawarma and tossed them with crispy fries, then piled on all the classic toppings. The real star? Terrapin Ridge Farms' squeezable Harissa Aioli, adding smoky heat while tying everything together. For an easy shortcut, grab a store-bought shawarma spice blend—3 teaspoons is all you’ll need.

Ingredients
1 tsp ground cumin
½ tsp sweet or hot paprika
¼ tsp ground coriander
¼ tsp ground cinnamon
⅛ tsp cardamom
Pinch of ground allspice
Kosher salt and freshly ground black pepper
3 Tbsp olive oil
One 20-oz bag frozen crinkle cut fries
1 medium vine-ripened tomato
⅓ cup chopped flat leaf parsley leaves
¼ cup finely chopped red onion
1 Tbsp finely chopped mint leaves
1 Tbsp finely chopped cilantro leaves and tender stems
1 small garlic clove, finely grated
1 Tbsp fresh lemon juice

Directions
Preheat the oven according to package instructions on the bag of fries.
In a small bowl, combine cumin with paprika, coriander, cinnamon, cardamom, allspice, ½ teaspoon salt, and ¼ teaspoon ground black pepper.
In a large bowl, toss frozen fries with spice mixture and 2 tablespoons of the olive oil and until nicely coated. Spread in an even layer on a large rimmed baking sheet. Bake fries according to package instructions, tossing halfway through. Alternatively, you can do this in an air fryer. Depending on the size of your air fryer basket, you may need to do this in batches.
Meanwhile, in a small bowl, combine tomato with parsley, red onion, mint, cilantro, garlic, lemon juice, and remaining 1 tablespoon of olive oil. Season with salt and pepper and let sit at room temperature until ready to use.
Arrange fries on a platter or large plate. Drizzle fries generously with the Harissa Aioli. Using a slotted spoon, spoon the tomato relish over the fries, letting any excess juices drip back into the bowl. Garnish with chopped pickles, crumbled feta, and more Harissa Aioli. Serve right away.
