Oven Baked Parmesan Fries with Lemon Garlic Aioli

You don’t need to deep fry potatoes to achieve a perfectly browned and crispy French fry. These oven-baked parmesan French fries will satisfy that comfort food craving, but in less time and with less mess and calories. The parmesan complements the thyme and garlic powder effortlessly and our Lemon Garlic Aioli is a welcomed alternative to ketchup.
Ingredients
- 3 russet potatoes (about ⅔ lb. each)
- 2 tablespoons avocado or olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon salt*
- ½ teaspoon pepper
- ½ cup finely grated parmesan

Directions
Preheat your oven to 425ºF.
Lightly grease a large cookie sheet with avocado or olive oil.
Wash the potatoes, thoroughly pat dry, then cut into ½-inch wide fries, lengthwise.
Place the fries in a large bowl and add oil, thyme, garlic powder, salt, pepper, and Parmesan. Toss until they are well coated.
Spread the fries out onto your sheet pan, making sure not to overcrowd. Use a second pan, if needed.
Bake for 30-40 minutes, or until golden and crisp on the edges, stirring once with a spatula or tongs half-way through.

Recipe Note
*If you like your French fries on the saltier side, we recommend increasing the salt to 1 ½ teaspoons.
