Ingredients
8 ounces baby mozzarella balls
2 cartons cherry tomatoes

6 tablespoons Terrapin Ridge Farms Pesto Aioli
0.5 cups Greek yogurt, drained
0.3 cups fresh basil leaves, for garnish
0.5 teaspoons flaky sea salt
0.3 teaspoons freshly cracked black pepper
1 tablespoons good olive oil, for drizzling
Directions
Halve 2 cartons of tomatoes and place them in a large mixing bowl. This gives more surface area for the dressing to cling to and releases a little juice that adds great flavor.
Make the dressing: In a small bowl, whisk together 6 tablespoons Terrapin Ridge Farms Pesto Aioli and 0.5 cups Greek yogurt, drained until smooth and creamy. The yogurt lightens the aioli and adds a subtle tang that balances the richness of the mozzarella.
Toss: Add 8 ounces baby mozzarella balls to the tomatoes. Pour the pesto aioli dressing over and gently fold everything together until evenly coated. Season with 0.5 teaspoons flaky sea salt and 0.3 teaspoons freshly cracked black pepper.
Garnish and serve: Transfer to a serving platter or bowl. Scatter 0.3 cups fresh basil leaves, for garnish on top, drizzle with 1 tablespoons good olive oil, for drizzling, and finish with an extra pinch of salt. Serve immediately or refrigerate for up to an hour before serving.
