Ingredients
8 ounces baby mozzarella balls
2 cartons cherry tomatoes

6 tablespoons Terrapin Ridge Farms Pesto Aioli
½ cup Greek yogurt, drained
⅓ cup fresh basil leaves, for garnish
½ teaspoon flaky sea salt
⅓ teaspoon freshly cracked black pepper
1 tablespoon good olive oil, for drizzling
Directions
Halve 2 cartons of tomatoes and place them in a large mixing bowl. This gives more surface area for the dressing to cling to and releases a little juice that adds great flavor.
Make the dressing: In a small bowl, whisk together 6 tablespoons Terrapin Ridge Farms Pesto Aioli and ½ cup Greek yogurt, drained until smooth and creamy. The yogurt lightens the aioli and adds a subtle tang that balances the richness of the mozzarella.
Toss: Add 8 ounces baby mozzarella balls to the tomatoes. Pour the pesto aioli dressing over and gently fold everything together until evenly coated. Season with ½ teaspoon flaky sea salt and ⅓ teaspoon freshly cracked black pepper.
Garnish and serve: Transfer to a serving platter or bowl. Scatter ⅓ cup fresh basil leaves, for garnish on top, drizzle with 1 tablespoon good olive oil, for drizzling, and finish with an extra pinch of salt. Serve immediately or refrigerate for up to an hour before serving.
