Red Pepper Salsa Chicken topped with Avocados

Ingredients
- 3 Large Chicken Breasts

1 Jar Of Terrapin Ridge Farms Red Pepper Salsa
- 2 Large Avocados
- 1/4 Cup Chopped Cilantro
- 1 Lime
- 3/4 Cup Shredded Monterey Jack Cheese
- Salt And Pepper
Directions
Preheat the oven to 400 degrees Fahrenheit.
Score your chicken breast and season with salt and pepper.
Place chicken in an oven safe dish and cover with Red Pepper Salsa. Bake for 25 minutes.
While the chicken cooks, dice avocado and toss with lime juice, cilantro and a pinch of salt.
Remove chicken from oven and add shredded cheese, return to oven for 5 minutes or until cheese is melted.
Top the salsa chicken with avocado and serve!
