Reinvented 7-Layer Dip

Who doesn’t love a 7-layer dip for football parties and holiday celebrations? There are so
many recipes out there for this iconic dip, but ours is a welcomed spin on the classic. Dare
we say our version offers a little more excitement than the classic sour cream, refried
bean, shredded cheddar, and black olive-topped combo?
We replaced the sour cream with our Hoppin’ Jalapeno Dip, subbed the tired shredded
cheddar/Mexican blend with vibrant crumbled Queso Fresco, and switched up the refried
beans for refried black beans. We also traded out the black olives and green onions for
chopped cilantro, thinly sliced jalapeno, and finely diced red onion…
This recipe is truly customizable though, so feel free to make any swaps of your own.

Ingredients
1 (16-ounce can) refried black beans
16 ounces fresh salsa*

1 jar Terrapin Ridge Farms Hoppin’ Jalapeno Dip
Quick guacamole, recipe follows
8 ounces Queso Fresco cheese, crumbled (cotija works well, too!)
1 jalapeno, seeded and thinly sliced
¼ cup red onion, very finely diced
¼ cup cilantro, chopped
3 ripe avocados
3 tablespoons cilantro, chopped
Juice from two limes
2-3 tsp salt
2 tsp garlic powder
Quick Guacamole
Directions
Make the quick guacamole – to a bowl, add the chopped cilantro, lime juice, salt, and garlic powder. Let marinate for 5 minutes. Then, add avocados and using the back of a large fork, mash until mostly smooth.
Drain the juice from the salsa into a medium or large mixing bowl. Set the rest of the salsa aside. To the salsa juice, add the refried black beans. Then, using a hand mixer, blend until smooth. Alternatively, you can use a whisk.
Using a 9x13 glass casserole dish*, layer the ingredients in the following order: salsa seasoned refried beans, Terrapin Ridge Farms Hoppin’ Jalapeno Dip, quick guacamole, salsa, crumbled queso fresco cheese, diced tomatoes, red onion, jalapeno, and cilantro.
Refrigerate for one hour and up to one day prior to serving.
Serve with sturdy tortilla chips.
Recipe Note
*We like a fresh, refrigerated salsa for this recipe, but jarred works too.
**You can use a smaller glass baking dish – you will have thicker layers.
