Roasted Dijon and Horseradish Potatoes

These are not your average roasted potatoes. Our creamy horseradish squeeze offers a unique and delicious flavor profile that’s a refreshing change from your standard rosemary and/or thyme potatoes. Dijon mustard complements the mild horseradish flavor effortlessly and once you generously drizzle more horseradish squeeze on top, you’re likely devouring some of the best roasted potatoes you’ve ever had. Serve these with your favorite steak and a Caesar salad for a restaurant caliber meal at home.

Ingredients
1 lb. baby red potatoes, halved (cut larger red potatoes in quarters or eights)
1/2 tablespoon Extra Virgin Olive Oil

1 tablespoon Terrapin Ridge Farms Horseradish Squeeze, plus extra for drizzling
½ tablespoon Dijon mustard
1 teaspoon salt
Freshly ground pepper
1/2 tablespoon parsley or chive, chopped
Directions
Preheat your oven to 400 degrees.
Place the potatoes in a large mixing bowl and drizzle with olive oil. Then, sprinkle with salt and pepper and add our horseradish squeeze and Dijon mustard. Toss until the potatoes are evenly coated and transfer to a large baking sheet.
Bake for 25 minutes or until crisp and golden on the edges.
Add to a large bowl or platter and immediately generously drizzle horseradish aioli on top. Toss to combine and garnish with parsley or chive.
