Roasted Red Pepper + Feta Hummus

When you need a last-minute appetizer or snack that is both healthy and delicious, but you do not want to buy store-bought, homemade hummus is always a safe bet! With the help of a food processor or high-speed blender, it takes just minutes to whip up and is so tasty paired with fresh veggies, pita, and crackers. This version is reminiscent of some of the varieties you will find in stores where there is a zesty filling in the middle – we use our Roasted Red Peper and Feta Dip for this one, which offers such a nice contrast to the silky smooth and mild chickpea and tahini base.

Ingredients
1 (15-ounce) can chickpeas, drained and rinsed well
¼ cup tahini
Juice from one medium-sized lemon
2 cloves garlic, minced
½ teaspoon ground cumin
½-1 teaspoon salt
2 tablespoons extra virgin olive oil, plus more for serving
2 to 3 tablespoons cold water

¼ cup Terrapin Ridge Farms Roasted Red Pepper + Feta Dip
Paprika for sprinkling on top
Directions
In a food processor, combine the tahini, lemon juice, garlic, cumin, and salt. Blend for about 1 minute until creamy, scraping the sides of the bowl as needed.
Add half of the chickpeas and blend for one minute. Scrape down the sides, add the remaining chickpeas, and blend for another minute or two.
With the processor still running, slowly drizzle in the olive oil and blend another minute. The hummus will be quite thick. To resolve this, add cold water, one tablespoon at a time, and blend until perfectly smooth.
Spoon the hummus into a shallow serving bowl, creating a well in the middle of the bowl for the Roasted Red Pepper + Feta Dip. Dollop the roasted red pepper dip in the well and then drizzle another teaspoon or two of olive oil on top. Sprinkle with paprika if desired.
Serve with sliced cucumbers, pita, bell pepper, and crackers.
