Seared Duck Breast with Smoky Dark Cherry Sauce

Ingredients
1 each Duck Breast – skin side scored
3 tablespoons + 3 Cherries

2 tablespoons Terrapin Ridge Farms Apple Maple Bacon Jam
- 3 cups water
1 cup Heavy Cream
1 cup Grits
- Salt and pepper
1 cup crumbled goat cheese
2 tablespoons slice scallions
Directions
Sear the duck breast skin side down.
Remove and finish in a hot oven.
Wipe out the pan and add the cherry juice and jam. Melt together.
Cut the cherries in half and add to the sauce.
Rest the finished duck then slice.
Place on a bed of grits and pour the sauce over top.
