Seven Spice Steak Skewers

These juicy steak skewers get their bold flavor from our Zesty Seven Spice Dressing, which acts as both a marinade and sauce. Flank or skirt steak works best here—the trick is to grill these skewers hot and fast, so they get a nice char on the outside, but stay pink and juicy on the inside. Serve them over a bed of rice to soak up all of the juices and tangy sauce. If you’d like, these skewers would also be great with some grilled broccolini or a punchy cucumber salad to round out the meal.

Ingredients
Twelve 10-inch wood or metal skewers
2 lbs flank or skirt steak, sliced ¼-inch thick against the grain
Kosher salt and pepper

½ cup Terrapin Ridge Farms’ Zesty Seven Spice Dressing, plus more for drizzling
1 large bunch of scallions, white and light green parts cut into 2-inch lengths, plus thinly sliced scallions for garnish
Canola oil, for brushing
Toasted sesame seeds and flaky sea salt (optional), for sprinkling
Steamed rice, for serving
Directions
If using wood skewers, place them in a baking dish and cover with water. Let soak for at least 1 hour and preferably overnight.
Meanwhile, in a large bowl, season sliced steak with salt and pepper. Add ½ cup of Seven Spice Dressing and toss to coat. Cover with plastic wrap and refrigerate for at least 1 hour and up to overnight. Let sit at room temperature for 30 minutes before grilling.
Preheat a grill or grill pan over high heat. Meanwhile, drain wood skewers, if using. Thread 2 to 3 pieces of steak onto each skewer, alternating with 1 to 2 pieces of scallions. Transfer to a baking sheet or large plate.
When ready to grill, brush the grate or grill pan with oil. Grill steak skewers until nicely charred on each side, 2 to 3 minutes per side. Transfer to a clean plate or platter and let rest for 5 minutes. Drizzle skewers with more Seven Spice Dressing and garnish with more sliced scallions. Sprinkle with toasted sesame seeds and flaky sea salt, if desired. Serve with steamed rice on the side.
