Ingredients
12 mini sweet bell peppers, halved and deseeded
1/2 pound ground beef, cooked and seasoned with taco seasoning
1/2 cup black beans, rinsed and drained
1/3 cup corn kernels (fresh, canned, or frozen)
1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
1/4 cup salsa (your favorite variety)
1/4 cup guacamole
2 tablespoons plain Greek yogurt

Directions
Cut the mini bell peppers in half lengthwise and remove the seeds. Arrange them on a baking sheet.
Brown the ground beef in a skillet over medium heat, seasoning it with taco seasoning for extra flavor.
Fill each mini bell pepper half with a spoonful of ground beef, black beans, and corn.
Sprinkle shredded cheese generously over the filling.
Bake in a preheated oven at 375°F for 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top each pepper with a bit of salsa, a dollop of guacamole, and a swirl of Greek yogurt.
Generously drizzle Spicy Chipotle Squeeze over the assembled mini bell peppers for a smoky, spicy kick.
Arrange on a platter and serve warm.
