Spicy Pineapple Tuna Tacos

These tacos are something special. Not only are they colorful with the ruby red medium rare
tuna paired with sliced avocado and cabbage slaw, but they’re also a total flavor
bomb. These tacos will impress family members and guests too, as they boast restaurant
quality flavor and textures. But the best part – they take 20 minutes to prepare. With short
cut ingredients like bagged cabbage slaw and our Spicy Pineapple Teriyaki Grill and Wing
serving as the quick marinade to the tuna, the recipe is simple to follow…even on a busy
weeknight.
Ingredients

1/2 cup plus 2 tsp. Terrapin Ridge Farms Spicy Pineapple Teriyaki Grill and Wing Squeeze
1 pound Ahi or Yellowfin Tuna steak, about 1 ½ inches thick

2 Tbsp Terrapin Ridge Farms Sriracha Aioli
¼ cup sesame seeds, white or black
1 tbsp. sesame or avocado oil for searing
½ cup fresh pineapple, chopped small
1 Tbsp. fresh lime juice (about one lime)
2 cups cabbage/carrot slaw mix
1 avocado, pitted and sliced
Flour or corn tortillas
1-2 tsp. oil or avocado cooking spray
Directions
Marinate your tuna steak(s). Using a shallow dish or large resealable bag, add tuna and ½ cup Terrapin Ridge Farms Spicy Pineapple Teriyaki Grill and Wing Squeeze. Marinate in fridge for 30 minutes to one hour.
Spread sesame seeds out on a plate. Pull tuna from fridge and coat in the sesame seeds on all sides.
To a large cast iron or nonstick skillet, bring 1 tbsp. sesame or avocado oil to medium high heat. Place tuna in pan and sear for 1 minute to 1 minute 30 seconds. Carefully flip the tuna and sear on the other side for an additional 1 minute to 1 minute 30 seconds. Then, quickly sear the sides of the tuna for 15-20 seconds each. Remove from heat*.
Prepare the slaw. To a medium bowl, add cabbage slaw along with chopped pineapple, lime juice, and 2 tsp. of Terrapin Ridge Farms Spicy Pineapple Teriyaki Grill and Wing Squeeze. Toss to combine.
Heat 1 tsp. oil in a cast iron or stainless-steel pan on medium-high heat. Add your corn or flour tortillas, one at a time, and heat for 10-15 seconds on each side. Addan additional tsp. oil or spray of cooking oil as needed. Prepare the slaw. To a medium bowl, add cabbage slaw along with chopped pineapple, lime juice, and 2 tsp. of our Spicy Pineapple Teriyaki Grill and Wing Squeeze. Toss to combine. Heat 1 tsp. oil in a cast iron or stainless-steel pan on medium-high heat. Add your corn or flour tortillas, one at a time, and heat for 10-15 seconds on each side. Add an additional tsp. oil or spray of cooking oil as needed.
Using a large, sharp knife, slice your tuna into ¼ inch thick slices. 8. Assemble tacos. To the tortillas, add slaw mixture, sliced tuna, sliced avocado, and a drizzle of Terrapin Ridge Farms Sriracha Aioli.

Ahi/Yellowfin Tuna Doneness Scale
Cooking times will vary based on the tuna's thickness and temperature of your stove and
pan. Here’s the general guideline when searing 1 ½-inch thick tuna steaks on medium-high heat per side: Rare = 1 minute, Medium Rare = 1.25 minutes, Medium = 1.5 minutes, Well Done = 1.75 minutes. We recommend medium-rare or medium for best flavor and texture.
