Spicy Tuna Poke Bowl with Zesty Seven Spice Dressing

Poke bowls are a lot easier than many think! If you can get your hands on some sushi-grade ahi or yellowfin tuna (find your local fishmonger or check with specialty meat and seafood stores), then it’s an incredibly straightforward dish to make in the comforts of your own home. The variety of textures and Asian flavors really makes poke a fun dish too. We love our Zesty Seven Spice Dressing generously drizzled on top.

Ingredients
1-pound fresh sushi-grade ahi or yellowtail tuna, chopped
¼ cup finely diced yellow or white onion
3 tablespoons sliced scallion, white/light green part only
1/3 cup coconut aminos or tamari
Juice from one lime
1 tablespoon toasted sesame oil
1 teaspoon freshly grated ginger
1/2 teaspoon crushed red pepper
¾ cup thinly sliced Persian cucumbers
1 large avocado, sliced in wedges
¾ cup diced fresh mango
1 large jalapeno, seeds removed and thinly sliced
1/4 cup sliced scallion

2 tablespoons Terrapin Ridge Farms Seven Spice Dressing
Furikake or toasted sesame seeds for garnishing
3 cups cooked sushi rice
For the marinated tuna

Directions
Marinate the tuna – in a large bowl, whisk together the coconut aminos, grated ginger, lime juice, crushed red pepper, and toasted sesame oil. Add the diced tuna, onion, and scallion and toss to coat. Let marinate in the fridge for 30 minutes.
Cook the rice in a rice cooker or on the stove, according to package directions (sushi rice generally calls for 30 minutes of soaking, so you may want to do this step first, if working with sushi rice)
Assemble the poke bowls – arrange the marinated ahi tuna over the rice, then top with sliced cucumbers, avocado wedges, diced mango, jalapeno, and more scallions, if desired.
Generously drizzle with Seven Spice Dressing and sprinkle furikake or toasted sesame seeds on top.
Serve immediately and enjoy!
