Sushi "Tacos" with Seven Spice Dressing

Think of this recipe as a fun, deconstructed take on sushi rolls—served taco-style! Pile sushi-grade fish, toasted nori sheets, steamed rice, and your favorite toppings like avocado, mango, or julienned carrots onto a platter, then let everyone build their own “tacos,” all tied together with our creamy Zesty Seven Spice Dressing.

Ingredients
1 cup uncooked sushi rice
4 large sheets toasted lightly salted nori
8 oz jumbo lump crab meat, picked over

2 Tbsp Terrapin Ridge Farms’ Zesty Seven Spice Dressing, plus more for serving
8 oz sushi-grade salmon and/or tuna, cubed or thinly sliced
Thinly sliced cucumber, sliced avocado, diced mango, microgreens, salmon roe and/or tobiko, and sesame seeds (optional), for garnish
Directions
Cook the sushi rice in a rice cooker or on the stove top according to package instructions. When it is finished cooking, remove from heat, fluff rice, and cover with a clean dish towel; let cool slightly.
Using scissors, cut each nori sheet into 4 rectangles (roughly 3-by-5 inches each).
In a small bowl, toss crab meat with Seven Spice Dressing. In a separate small bowl, dress salmon and/or tuna with a light drizzle of Seven Spice Dressing.
Assemble a large platter with toasted nori sheets, steamed rice, crab meat, raw fish, and desired toppings such as cucumber, avocado, mango, microgreens, and sesame seeds. Let guests assemble their own “tacos,” passing more Seven Spice Dressing on the side for drizzling.
