Sweet and Smokey BLT Crostini

This unexpected crowd-pleasing appetizer is perfect for just about any gathering and can easily be customized to your taste and the ingredients you have on hand. Feel free to substitute the arugula with a small piece of romaine – or the parmesan with some sharp cheddar. Our honey BBQ aioli adds the creamy component you’d normally get from mayonnaise but also offers some subtle sweetness to every delicious bite.

Ingredients
- 1 French baguette, cut at 12 inches (you can freeze the rest!)
- 1 ½ cups cherry tomatoes
- 8 slices bacon
- 2/3 cup arugula
- 1/2 cup parmesan cheese, finely grated
- 3 tablespoons extra virgin olive oil

Directions
Line a large baking sheet with parchment paper or aluminum foil. Add bacon slices and place on the center rack of a cold oven. Turn oven on to 400 degrees. Cook for 20 minutes, or until crispy.
While the bacon cooks, prep the rest of the ingredients.
Slice the baguette into ½ inch slices and place on a pan. Brush lightly with olive oil and add to bottom rack of your oven and bake for 10 minutes, or until crostini edges are golden.
Slice cherry tomatoes (about 4-5 slices per tomato) and set aside.
Pull crostini from oven and immediately top with a pinch of parmesan and return to the oven for 2-3 minutes.
Once bacon is cooked, remove it from oven and place each slice on a paper towel to absorb the excess grease. When cooled, break each slice into thirds.
Top each crostini with a generous drizzle of our Honey BBQ Aioli, a few arugula leaves, 3-4 tomato slices, a sprinkle of salt and pepper, and a piece of bacon.
