Thai Pineapple & Shrimp Fried Rice

This is not your takeout Thai fried rice…it’s better. Our Thai Pineapple & Shrimp Fried Rice a one-pan dinner that’s super simple to prepare and doesn’t skimp on flavor or texture. Sweet, tangy, salty, and even a little spicy…it’s got all the classic Thai fried rice components…and more. We swapped out the soy sauce and oyster sauce in this one for our complex Spicy Pineapple Teriyaki sauce and we think you’re going to love the swap. Don’t forget to serve this dish with a wedge of lime for a little extra zing, too.

Ingredients
3 tbsp high heat cooking oil, divided
2 garlic cloves, finely minced
½ cup yellow onion, finely chopped
1 lb. medium shrimp, peeled and deveined
1 small red bell pepper, diced
1/2 cup green onion, thinly sliced
1 cup fresh pineapple, chopped small
2 eggs, beaten with salt
1/2 cup frozen peas, thawed and drained of any excess water
3 cups day old white rice (Jasmine rice is preferred)

1 lime, sliced in wedges

Directions
Pat shrimp dry with a paper towel and season with salt. Set aside.
Heat one tablespoon oil in a wok or large skillet over medium heat. Add the chopped yellow onion and garlic and sauté for 2 minutes. Add the shrimp and cook until shrimp and firm and opaque. Set aside in a bowl*.
Add another tablespoon oil and add red bell pepper, chopped pineapple, and green onion. Cook 4-5 minutes, or until bell pepper is tender and pineapple is slightly caramelized. Add peas and cook another minute. Push the veggies to one side of the pan and add the egg. Stir gently and cook through. Mix with veggies.
Add another tablespoon oil and increase the heat to medium high heat. Add the rice and evenly distribute it on the pan. Cook for 2 minutes undisturbed, so the rice gets a little crispy on one side. Add the Terrapin Ridge Farms Spicy Pineapple Teriyaki Grill and Wing sauce and toss until combined. Again, let the rice get crisp in the pan, cooking it an additional 2-3 minutes.
Stir in shrimp and cook one more minute.
Serve immediately, garnishing with a lime wedge.
Recipe Note
*When pulling the shrimp from the skillet, it’s okay to pull some of the onion and garlic
mixture with it. Just be sure to leave some of the onions and garlic in the pan to flavor the
veggies, rice, etc.
