Ingredients

For the chicken:

2 cups cooked shredded chicken
½ cup Terrapin Ridge Farms Tropical Tequila Sauce
1 tbsp olive oil
1 tsp smoked paprika
½ tsp cumin
Salt & pepper to taste

For the tacos:

8 small corn or flour tortillas
½ cup dice red onion
½ cup diced pineapple (fresh or drained canned)
Fresh cilantro, chopped

Optional toppings:

Sliced avocado or guacamole
Sour cream

Directions

Season the chicken with cumin, paprika, salt and pepper.
Heat olive oil in a skillet over medium heat and sear the chicken lightly browned (4-5 minutes per side).
Add the Tropical Tequila Sauce, cover and simmer on low heat for 20-25 minutes until the chicken is fully cooked and tender.
Remove the chicken and shred it using two forks. Return it to the pan and toss in the sauce until well covered.
Heat tortillas in a dry skillet or microwave until soft and pliable.
Assemble tacos
