It happens every single night. Someone walks into the kitchen, looks at you, and asks the question. And just like that, the pressure is on. What is for dinner?
We built this series to answer that question for you — with real recipes that come together fast and taste like you put in way more effort than you did. The secret? Every recipe is built around a Terrapin Ridge Farms product that brings the flavor, so you don't have to.
This week: bowls. Four of them. Each one a different flavor profile, each one a different Terrapin Ridge Farms product, and each one a new answer ready to go the next time someone asks.
1. Southwestern Chicken Bowls with Spicy Chipotle
Ingredients
- 1 cup white or brown rice
- 2 cups water or chicken broth
- 2 cups cooked shredded chicken
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or thawed frozen)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- ½ cup Terrapin Ridge Farms Spicy Chipotle Squeeze
- Juice of 1 lime
Garnish Options
- Chopped fresh cilantro
- Sliced green onions
- Crumbled queso fresco or cotija cheese
- Pickled red onions
- Jalapeño slices
- Lime wedges

Directions

Add the rice and water or broth to a saucepan or rice cooker and cook according to package directions.

While the rice cooks, heat olive oil in a skillet over medium heat. Add the shredded chicken along with chili powder, cumin, garlic powder, salt, and pepper. Cook for 3–4 minutes, stirring occasionally, until warmed through and well seasoned. Remove from skillet.

Add the black beans and corn to the skillet and cook for another 2–3 minutes until heated through.

To assemble, divide the cooked rice among four bowls. Top with the warm chicken, bean, and corn mixture. Add cherry tomatoes and diced avocado to each bowl. Drizzle generously with Terrapin Ridge Farms Spicy Chipotle Squeeze and finish with a squeeze of fresh lime juice.

2. Loaded Cheeseburger Bowl with Avo Everything Aioli Garnishing Squeeze
Ingredients
- Shredded Lettuce
- Diced Onion
- Chopped Bacon
- Chopped Pickle
- Chopped Tomatoes
- American Cheese
- Ground Beeft
- Terrapin Ridge Farms Avo Everything Aioli Garnishing Squeeze

Directions
- Turn on the grill or stove to med high heat (375-400).
- Place the meat in a mixing bowl and add in about 4 tbsps of Everything Aioli. Mix and form your patties. Place burgers on the grill.
- While burgers are grilling get your bowls ready and add in all the ingredients.
- As the burgers are finishing up add the American cheese on top.
- Place burgers in the bowls and squeeze Everything Aioli on top.
3. Salmon Bowl with Avo Zingy Aioli Garnishing Squeeze
Ingredients
- 1 tbsp dijon mustard
- 2 tbsp olive oil, divided
- Salt and pepper to taste
- 1 lb salmon, skin removed and either cubed OR whole
- 2 cups cooked rice
- 3 cups mixed greens
- 1 cup baby tomatoes, halved
- 1 medium cucumber, shaved into ribbons or chopped

Directions
- Combine dijon, 1 tbsp olive oil and salt and pepper in a small bowl and whisk to combine.
- Place salmon cubes (or whole piece) in a medium bowl, then toss gently with the mustard/oil mixture until coated evenly.
- Add the remaining 1 tbsp of olive oil to a large frying pan over medium-high heat. Heat oil until it shimmers.
- Add the salmon to the pan, and cook undisturbed, until the piece(s) are browned and starting to crisp on one side.
- Using a fish spatula, gently flip over.
- Repeat step 4 if using cubed salmon, until all sides have been crisped.
- To assemble each bowl, place 1 cup rice, 1.5 cups mixed greens, ½ c. halved tomatoes, and half of the cucumber in a bowl. Top with half of the salmon. Drizzle with Terrapin Ridge Horseradish Sauce Garnishing Squeeze. Repeat for the second bowl.
- Enjoy immediately!
4. Poke Bowl with Pineapple Habanero Sauce
Ingredients
- 1 pound sushi grade ahi tuna and/or salmon cut into 3/4 inch cubes
- 1/4 cup low sodium soy sauce
- 1/4 cup Terrapin Ridge Farms Pineapple Habanero sauce
- 1/2 teaspoon sesame seeds for garnish
- Cooked rice (roughly 2 cups cooked)
- Salad or herb leaves
- Avocado slices
- Seaweed salad
- Cucumber slices
- Pickled ginger
- Edamame
- Lime slices
- Carrots thinly sliced
- Radish, thinly sliced
Directions
- Combine the poke fish and Pineapple Habanero sauce in a bowl.
- Assemble poke bowl immediately by scooping half a cup of rice on the bottom, followed by your toppings.
- Drizzle with extra Pineapple Habanero sauce and soy (optional) and sprinkle with sesame seeds. Serve immediately.
