Ingredients
2 ripe avocados
4 slices dark rye (party size)
2 large tomatoes, sliced
-
3 tablespoons Terrapin Ridge Farms Avo Zing Garlic Aioli Squeeze
1 tablespoons fresh lemon juice
1 tablespoons fresh lemon juice
0.5 teaspoons flaky sea salt
0.3 teaspoons black pepper
1 tablespoon watercress
4 tablespoons cottage cheese (optional)
Directions
Toast the bread: Toast 4 slices dark rye bread in a toaster or under the broiler until firm and lightly crisp. Dark rye holds up well under toppings, so don't be shy — a good toast is key.
Smash the avocado: Halve and pit 2 ripe avocados. Scoop the flesh into a bowl and add 1 tablespoons fresh lemon juice, 1 garlic clove, minced, 0.5 teaspoons flaky sea salt, and 0.3 teaspoons black pepper. Smash with a fork to your preferred texture — chunky is perfect here. Taste and adjust seasoning.

Assemble: Spread a generous layer of the smashed avocado mixture onto each piece of toast. Layer 2 large tomatoes, sliced slices on top, slightly overlapping.
Drizzle & garnish: Drizzle 3 tablespoons Terrapin Ridge Farms Avo Zingy Garlic Aioli generously over each toast in a zigzag pattern. Finish with a pinch of 0.5 teaspoons flaky sea salt, 0.3 teaspoons red pepper flakes (optional) if using, and a few sprigs of 1 tablespoons fresh dill, for garnish. Serve immediately.
