We had lunch at a small deli in Cannon Beach recently. My husband ordered a meat and cheese plate and there was one ingredient on the plate he didn’t recognize. It was a jam with smoky bacon flavor that was a perfect accompaniment for the goat cheese. We had to find out what it was, who made it and if it was for sale at this deli. As soon as the waiter told us it was bacon jam from Terrapin Ridge Farms, I was searching for it on line! I ordered 4 jars to start and I’m sure we will be regular customers. We also plan to take several jars to share with our friends and neighbors in Italy this summer. It will be perfect with fresh robiola cheese! It’s an amazing jam!

This jam is great served over Brie and heated in the oven to slightly melt the Brie.
